Happy First Day of Summer! Today I want to take the time to think about my first times-both the happy and sad ones. It’s a time to reflect the 20 years of my life and what life will throw at me in the future. So let’s begin…

First time I baked…7th/8th grade

I could go on and on but don’t want to bore you with all of my firsts. As always on Fridays, I made a Homemade Cookie Brand & they came out to be Oreo Whoopie Pies! I guess I did not take into account that my cookies would spread like lava on the pan. The Oreo ® flavor was there even though it didn’t look like an Oreo®. The recipe is by Cupcake Project. I cut the recipe in half because 40 Oreo® cookies is a huge batch for my family of 5. I didn’t use shortening in the filling recipe because I didn’t have it, but the filling was still sweet & yummy!

Cookie Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 1/4 cup of all-purpose flour
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder and salt

Filling Ingredients:

  • 1/4 cup butter
  • 1/2 cup powdered sugar
  • 1 teaspoon of vanilla extract

Directions:

1. Preheat oven to 375 degree Fahrenheit. Line baking pan with parchment paper or greased aluminum foil.
2. Combine flour, cocoa, baking powder, baking soda, salt, and sugar in medium bowl.
3. Beat butter and egg together. Pour in previous mixture into blended egg and butter. Mix until smooth.
4. Scoop up a teaspoon of dough and flatten with palms onto the baking pan.
5. Bake in the oven for 9-10 minutes. Once done, let them cool on a plate or rack.
6. Filling: Beat butter until smooth. Pour in sugar and vanilla extract and mix until light and fluffy.
If it looks crumbly, add 2-3 teaspoons of milk. If too watery, add 2-4 spoonfuls of powdered sugar.
7. To form the cookie sandwich, spread a dollop of filling onto 1 cookie and place another cookie on top of filling. Gently press it down and continue to sandwich all cookies together!

Serve with a cold glass of milk or whatever drink you prefer! Happy Baking!
