5 Quick Banana Recipes

I’m staring at my brown, overripe bananas and I’m thinking what I should make with them. I love putting bananas in any baked good, bread, or during breakfast and lunch! Bananas are so rich in potassium, fiber, and vitamin C. Obviously, bananas are gluten-free and if you’re vegetarian/vegan, they can replace eggs in baking recipes.  Here are 5 quick banana recipes that I like to make.

1.  Gluten Free Banana Chocolate Chip Muffins

3. Chocolate Dipped Bananas

  • In a microwave, melt your choice of chocolate chips or chocolate bar (white chocolate, milk and dark chocolate) for 30 second increments for 1-2 minutes. The chocolate should be smooth and liquidy. Burned chocolate (Chocolate can BURN) is thick and clumpy.
  • Dip half of the banana slice into melted chocolate OR drizzle the melted chocolate over sliced banana

4. Peanut Butter and Banana Sandwich

  • Slice 1 banana with a knife.
  • Spread peanut butter onto your choice of sliced bread (I like to eat it on Ezekial Bread-Gluten free)
  • Place the sliced bananas on top of the sliced bread with peanut butter. Smoosh the slices together and enjoy!

Gluten Free Cake in a Mug

Who is still recovering from the holiday season? I know I still am! Lately, I’ve been trying to eat CLEAN and not stuff myself with cookies day and night. Since baking and eating cookies all week can get tiring, I needed a simple and quick pick-me-up! So I began looking into microwavable desserts in a mug such as cake in a mug, chocolate chip cookies in a mug, brownies in  a mug and more! Anyone who wants a quick, cheap treat to indulge in, then my gluten-free cake in a mug recipe will satisfy your sweet tooth!

Behold! I found numerous mug recipes and modified this eggless cake mug recipe from Sizzling Veggies which is not gluten free. I was afraid the cake would be under-cooked but it came out like any other well made cake! I ate it right up in 5 bites! This gluten free cake in a mug can have chocolate chips, melted marshmallows, sprinkles, cocoa powder, hot coffee, Hershey kisses and any other sweet toppings. You can replace the gluten free flour with all purpose flour. So grab your favorite mug (microwavable) and treat yourself to this easy, delicious dessert!

Here’s an update on my gluten free eating. In the first month or two and especially the holidays, it was hard to be gluten free. I always had a temptation to  eat the breads, cakes, cookies, and etc. I managed to live without pasta for most of my meals and have been eating lots of white rice. Since I don’t have celiac disease or allergies to gluten, I wasn’t entirely strict with myself. I’ve learned that I’m comfortable with moderation and liked how I challenged myself to be gluten free. It has opened my mind and body to eat clean,work out, and indulge in yummy meals with gluten. The other day I went on an organic shopping haul at Whole Foods and Costco. I bought amaranth grain, gluten free bread, gluten free soy sauce, quinoa, greek yogurt, frozen veggies, organic soy milk, and more yummy items! I cooked quinoa for the first time with black beans, chick peas, cilantro, and olive oil. It wasn’t too bad! Right now, I’m happy with my eating habits and fitness routine (Pilates and Yoga).

  • 3 TBsp gluten free flour (blend of rice flour and potato starch)
  • 2 TBsp brown or white sugar
  • 1/8 tsp baking soda
  • 1/8 tsp baking powder
  • 1/8 salt
  • 1 TBsp vegetable oil
  • 3 TBsp milk, creamer or half n’ half
  • 1/4 tsp vanilla extract
  • 1 tsp chocolate chips
  • Dash of cinnamon

1. In a microwavable mug, combine flour, sugar, baking soda, powder, salt, and cinnamon together. Stir well in the mug with a spoon.
2. Add oil, milk, and vanilla extract into mixture. Stir well with a spoon until there are no lumps.
3. Add in chocolate chips. Place mug into microwave and change cook power level to 6. Microwave for 1 minute. Then, microwave at highest power level, 10 for another 1 minute.
4. BE CAREFUL, mug is super hot when taking it out! Cake should be cooked at the bottom.

Quick Treat: Buckeyes

Ohio has a state food-the famous Buckeye candy which is named after the Buckeye tree nuts. They taste like Reese’s so if you’re craving any I’d definitely make these.

These should be your go to if you’re vegetarian, gluten intolerant and needs no oven lovin’ aka baking!



  • 2 1/2 cups of confectioner/powdered sugar
  • 1 cup peanut butter
  • 5 tablespoons of melted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 oz of semi-sweet chocolate or any choice of chocolate chips



1. Mix together the powdered sugar, peanut butter, melted butter, vanilla, and salt. The mixture will look crumbly and you can add 1-2 tablespoons of water to make the dough smoother. Roll dough into a 1 inch ball and place on wax paper covered cookie sheet/tray.
2. Stick a tooth-pick in each ball. Freeze for 30 minutes-1 hour.
3. Melt the semi sweet chocolate or your choice of chocolate for 2 minutes in microwave. Microwave the chocolate in 30 second increments or you’ll get burnt chocolate if heat for 2 minutes straight!
4. Dip cookie ball into melted chocolate but leave a visible circle of peanut butter. Scrape off excess chocolate and place it onto the cookie sheet/tray.
5. Freeze the buckeyes for 1 more hour. Serve it chilled or with some more melted chocolate!

Nutella Cookies with 3 Ingredients

Check out Butter baking blog…she’s an amazing and trained pastry chef who changed her career path recently. Her photography and baked goods are fabulous and beautiful! You must try one of her recipes.

I made her Nutella Cookies which came out fudgy, chewy, and delicious. The BEST part about these cookies is that they have 3 main ingredients-Nutella, flour, and egg! So quick, easy, and simple that you can make dozens of these cookies-starting now! Also, visit Butter at!

Yields 12-16 cookies

1 cup of Nutella
1 cup of all-purpose flour
1 egg

1. Preheat oven to 350 degrees Fahrenheit and line cookie sheet with aluminum
2. In a mixing bow, mix Nutella and egg together. Add in flour until well-blended.
3. If dough is too gooey or sticky, chill in fridge for 30 minutes
4. Roll dough in balls and place on lined cookie sheet.
5. Bake for 6-8 minutes. Let it cool when baked & Enjoy!

Quick Treat: Cereal Bar

Cereal bars are great when you’re on the go or need a quick bite to eat.  You can use any kind of cereal-Cheerios, Rice Krispy Treats, Fruity Pebbles, Corn Pops, and others.   It’s so easy to use make cause you don’t need an oven! It takes less than 5 minutes to make too!

Another hint is that marshmallows harden easily so you must combine the cereal and marshmallows quickly. I used Cocoa Rice Krispy and Fruity Pebbles, and I sold them for a bake sale. Then, the leftovers (ones not sold) went to my floor-mates at my dorm.

Yields 8-12 bars depending on pan


  • 1 cup mini or regular sized marshmallows
  • 1 1/2 cup choice of cereal
  • 1  tsp of butter/margarine


  1. Use a microwavable bowl that’s deep and melt butter for 10-15 seconds in microwave. Note: Marshmallows will rise hence the deep bowl!
  2. Spread melted butter around bowl so marshmallows won’t stick.  Pour marshmallows into bowl and heat for 1 minute
  3. Stir melted marshmallows with fork or spoon.  Then quickly pour in cereal before the marshmallows harden!
  4. Mix cereal and melted marshmallow thoroughly. If needed, pour more cereal in.
  5. Place mixture into a square pan, mold and shape mixture with a sturdy spoon .  Let it cool for few minutes. Cut with a knife into square cereal bars.
